Key Lime, Coconut, Ginger, Cardomom, Pistachio, No Bake Cheesecake

Disclaimers I did not originate these recipes. I just personalized them. All cooking info will be edited, but my Alter-Ego, Pappy, will give any special instructions.

No Bake Cheesecake with Key Lime, Ginger, Coconut, in a Ginger Snap cookie crust with Cardomom.
Ingredients: Cheesecake
1 14oz can Sweetened Condensed Milk
1 8oz tub of Cool Whip thawed

1 8oz package Cream Cheese at room temperature

1 tsp grated fresh Ginger

2 tsp Coconut Extract

1/3 cup Key Lime juice (fresh is best) about 7 Key Limes
Ingredients: Ginger Snap crust
1 3/4 cup Ginger Snap Cookie crumbs
1 tsp ground Cardamom pods
1/4 cup Packed Brown Sugar (dark prefered)
4 tbs (1/2 stick) melted Unsalted Butter
1/2 tsp coarse Salt (Kosher)
1 tbs Flour
Ingredients: Topping
1/4 cup hulled and cracked Pistachios
1/4 cup Toasted Coconut
2 fresh Kiwis peeled and sliced into half moons
Instructions

Crust first.

  1. In a large bowl, whisk together gingersnap crumbs, brown sugar, flour, Cardamom, and salt. Add butter and stir until mixture is well combined. Press some of the mixture against the side of the bowl with your fingers. If the crumbs do not hold together, add cold water, a little at a time, up to 1 tablespoon, and stir to combine.

  2. In a large bowl, Press crumb mixture into a 9-inch pie plate, evenly covering the bottom and sides. Transfer to freezer and chill for 10 minutes.

 

Cheesecake

Put all ingredients except Lime juice into your hand or stand mixing bowl. On low, combine all ingredients until smooth, then add Lime juice last as the Lime juice will harden the mixture.

Pour immedialy into your prefered bowl with the crust.

Put into refrigerator for 1 hour, remove and put on toppings.

Return to refrigerator for 1 to 2 hour before serving.

Pappy Sez: A few good n's. De eriginal recipe sed to use a 9" pie pan. I sed, uh uh, I uses a tall Pyrex bowl that is 3" tall and 7" wide. It will hold all de goody's de 9" pie pan will. Purtyer, too. And, I has a lid to save de left o'ers.
I uses Key Limes instid of plain. Much more lip pucker in 'em. I lak to pucker my lips. "Ya puts de limes inna coconut and drank it all up". Dat tune done been in my haid, all days.

I puts the half moon slices of Kiwi Fruit around the edge of the cake lak a fence around a sematary. Then in a corncentric circle, slowly sprankle a line of 'tachios. Then on each side of 'tachios, sprankle a line of Toasted Coconutties. Dis gives each slice bits o' both nuts. It's OK to slightly sprankle o'er de 'tachios, jes be careful not to hide too much of the green 'tachios.

I's could not near wait fer the dang thing to set up. So here's a slice wit some Black Silk cuppa jo. Alls dem flavors running 'round yo mouf liken a dang fool chicken wit dey head cuts off. OOOOWEEE, dems some fine eats, right dere!
